What each ingredient does

Rhubarb
Provides the fruit body and tart flavour, and its pieces hold their shape in the jam.
Sugar
Draws out the rhubarb's juice to form syrup, adds sweetness, and helps the jam set and keep.

The step that matters

Boil the syrup until it thickens. Sugar syrup must reach a high enough concentration before the fruit goes in. Boiling it down first lets the jam thicken and set properly instead of staying runny.
