What each ingredient does

Salt pork
Renders fat that carries flavour into the soup base as it browns.
Potatoes
Break down slightly as they cook, adding body and thickening the broth.
Clams
Provide the main seafood flavour, releasing savoury juices into the broth.
Flour
Thickens the liquid into a smoother, creamier soup when boiled.
Milk
Adds creaminess and mild sweetness, softening the soup's briny edge.

The step that matters

Boiling after adding the flour-milk mixture. Flour mixed with milk can clump if poured in raw. Mixing it with a little water first, then stirring it in, and boiling gently helps starch swell evenly and thicken the soup smoothly.

Swap the onion
