What each ingredient does

Black beans
Provide the main body and thickness of the soup as they break down into the broth.
Meat stock
Forms the liquid base and carries the savoury flavour of the soup.
Wine
Adds acidity and depth of flavour as it simmers into the soup.
Hard boiled eggs
Add richness and a soft texture as a topping.

The step that matters

Skim out any bones or pieces of meat before serving. Bones and small meat fragments left in the pot can be unpleasant to bite into and spoil the texture of the soup, so they should be removed completely before the soup is ladled out.
