What each ingredient does

Flour
Thickens the sauce and, when cooked until brown, adds a toasty flavor.
Butter
Carries the aromatics and adds richness to the sauce.
Onion
Adds savory sweetness and body as it softens into the base.
Mushrooms
Add earthy flavor and a meaty texture to the sauce.
Sherry wine
Adds acidity and depth of flavor to the sauce.

The step that matters

Cooking the flour until brown. Flour must cook long enough to lose its raw taste and gain color; if it is undercooked, the sauce will taste pasty. Cooking it in fat before adding liquid also helps prevent lumps.
