What each ingredient does

Bacon
Adds fat and smoky savour that flavours the tongue and the stewing liquid as it cooks.
Onions
Break down during stewing to add sweetness and body to the sauce.
Carrots
Release sugars during slow stewing, adding sweetness and depth to the sauce.
White wine
Adds acidity that brightens the braising liquid and helps draw out flavour.
Broth
Provides the main cooking liquid that keeps the tongue moist during the long simmer.

The step that matters

Simmering on moderate heat with the lid on. Tongue is a tough muscle that needs a long, gentle simmer to become tender. Boiling hard can toughen and dry the meat, while keeping it covered limits liquid loss and keeps the braise moist.
