  1. Scald sweetbreads in salt and water, then remove stringy parts.

  2. Soak in cold water for a few minutes and dry with a towel.

  3. Dip in egg and coat with bread crumbs.

  4. Fry in butter until browned.

  5. Place in a hot dish.

  6. In the pan, combine sweet cream, pepper, salt, and parsley.

  7. Add flour and bring to a boil.

  8. Pour the sauce over the sweetbreads and add mushrooms if desired.
