  1. Peel and slice the cucumbers, removing all seeds.

What each ingredient does

Cucumbers
Make up the bulk of the sauce, giving it a fresh, watery body once drained.
Vinegar
Acts as the preservative and provides the sharp, tangy flavour of the catsup.
Onions
Add pungent savoury flavour that deepens the catsup's taste.
Green peppers
Add a grassy, slightly bitter vegetable flavour and crunch.

The step that matters

Draining the grated cucumbers overnight. Cucumbers hold a lot of water. Draining them thoroughly keeps the catsup from becoming thin and diluted, and helps it stay concentrated and flavourful in storage.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, pepper, vinegar):

  1. Capsicumfits better
  2. Radishfits better
