What each ingredient does

Green tomatoes
Form the bulk of the pickle and provide the main texture once salted and drained.
Coarse sea salt
Draws water out of the vegetables, firming them and concentrating their flavour.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Sugar
Balances the sharp acidity of the vinegar with sweetness.
Onions
Add pungency and savoury depth to the pickle.
Mustard seed
Adds a sharp, pungent flavour and a bit of crunch to the pickle.

The step that matters

Layer with coarse sea salt and let stand overnight. Salt draws water out of the vegetables by osmosis. Skipping or shortening this step leaves excess moisture in the pickle, which dilutes the vinegar brine and leaves the texture soft.

Swap the tomato

How well each one fits the dish's main ingredients (onion, horseradish, pepper, vinegar, sugar, allspice, clove):

  1. Mustardfits better

Fit is the average pairing score against onion, horseradish, pepper, vinegar, sugar, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
