Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften slightly during boiling while holding their shape.
Brown sugar
Adds sweetness and helps balance the sharp acidity of the vinegar.
Vinegar
Provides the acidity that preserves the pickles and gives them their tang.
Onions
Add savory flavor and a little texture to the pickle.
Coarse sea salt
Draws water out of the tomatoes and onions, firming them before pickling.

The step that matters

Salting overnight and draining. Salt draws water out of the sliced vegetables through osmosis. Thorough draining removes that liquid so the pickles stay firm and the brine is not diluted.

Swap the tomato
