Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Mince Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the apples, boiled beef, butter or drippings, molasses, and water.

  3. Add the allspice, cinnamon, salt, cloves, vinegar, and grated nutmeg. Mix well.

Bake

  1. Pour the mixture into a pie crust and cover with another crust.

  2. Bake for about 45 minutes or until the crust is golden brown.

What each ingredient does

Apples
Provide bulk and tartness that balance the sweet molasses and spices.
Boiled beef
Adds savory body and meaty texture to the filling.
Butter or beef drippings
Adds richness and fat that carries flavour and softens the filling.
Molasses
Provides dark sweetness and moisture, and deepens the colour of the filling.
Vinegar
Adds acidity that brightens the rich, sweet filling.

The step that matters

Bake until the crust is golden brown. The crust needs enough time in the oven for its starches to set and its sugars and proteins to brown, which makes it crisp and flavourful. Pulling the pie early leaves a pale, soggy crust over a filling that has not fully set.

Swap the apple

How well each one fits the dish's main ingredients (beef, butter, molasses, allspice, cinnamon, clove, vinegar):

  1. Figfits about as well
  2. Orangefits about as well
  3. Raisinfits about as well

Fit is the average pairing score against beef, butter, molasses, allspice, cinnamon, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
