What each ingredient does

Strawberries
Provide the main flavour and juice that forms the body of the ice.
Sugar
Sweetens the mixture and draws juice out of the strawberries as it stands.
Egg whites
Whisked into the half-frozen mixture to add a light, airy texture.

The step that matters

Folding in the egg whites when the mixture is half frozen. If the mixture is too liquid or fully frozen, the whites will not blend in evenly, leaving streaks or dense pockets. Half-frozen ice holds the whisked foam and keeps it light.
