Why it works: Marjoram and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 957 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Breaded Veal Cutlets

Ingredients

Directions

  1. Cut veal into 3/4 inch thick cutlets, about the size of your palm.

  2. Grate stale bread and rub it through a sieve; mix in salt, pepper, marjoram, lemon rind, mace, and nutmeg on a flat dish.

  3. Dip each cutlet into beaten eggs, then coat with the bread mixture, ensuring it adheres well.

  4. Heat sweet lard and a small amount of butter in a pan until boiling; fry the cutlets, turning them three times to avoid burning.

  5. Place cooked cutlets in a hot, covered dish.

  6. For the gravy, sift flour into the fat in the pan, stirring until brown; add boiling water to achieve the desired consistency.

  7. Stir in chopped parsley and vinegar, then pour the hot gravy over the cutlets.

  8. Serve immediately.
