Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. In a saucepan, boil the milk and tapioca together.

  2. In a bowl, beat the yolks of the eggs and mix them into the tapioca mixture.

  3. Add vanilla extract for flavor.

Top and bake

  1. In another bowl, beat the egg whites until stiff peaks form.

  2. Spread the beaten egg whites on top of the mixture.

  3. Bake in a 400°F (200°C) oven for a few minutes until browned.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Milk + vanillatop 5% of all pairs

    Cooked together19,187 recipes

Shared aroma: ethyl caproate (fruity, apple peel).

    Cooked together27,347 recipes

    Shared aroma: 1-octen-3-ol (mushroom, earthy).

Egg and vanilla barely smell alike, yet cooks put them together in 27,347 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body.
Eggs
Yolks enrich and help set the custard; whites whip into a stiff topping that browns in the oven.
Milk
Forms the liquid base that the tapioca swells in and the eggs set into a custard.

The step that matters

Beating the egg whites until stiff peaks form. Whites must be whipped until they hold firm peaks so the topping stays light and puffs rather than sinking into the pudding. Under-beaten whites spread flat and brown unevenly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
