Beef and Okra Soup

Ingredients

Directions

Prepare the beef

  1. Cut the soup beef from the bone and crack the bone to release the marrow.

Simmer the soup

  1. Place the meat and bone in a large saucepan with cold water, salt, red pepper, tomatoes, onion, green pepper, okras, and Lima beans.

  2. Cover the saucepan and gently simmer for 4 hours, ensuring it does not burn.

  3. Boil the crabs, remove the meat from the shells, or use canned crab-meat.

  4. After 4 hours, remove the beef bones, leaving the meat and marrow in the soup.

  5. Add the crab-meat to the soup and thin with boiling water if too thick.

  6. Season to taste and serve hot.

What each ingredient does

Soup beef
Provides the main meat flavor and body as it simmers slowly for hours.
Okras
Release natural thickening starch during long cooking, giving the soup body.
Tomatoes
Add acidity and fresh flavor that brightens the broth.
Lima beans
Add starch and a creamy, tender texture to the soup.
Crab
Adds sweet, delicate seafood flavor and tender pieces of meat.

The step that matters

Keep the simmer gentle and the pot covered. A gentle, covered simmer over 4 hours lets the beef and marrow become tender and flavorful without scorching on the bottom. A hard boil toughens meat and can burn the sugars in the pot.

Swap the lima beans

How well each one fits the dish's main ingredients (beef, pepper, tomato, onion, okra, crab):

  1. Beansfits better
  2. Black-eyed peafits better
  3. Lentilsfits better
  4. Lima beansthe original
