What each ingredient does

Giblets
Provide the main meat flavour and body of the soup as they simmer.
Butter
Carries the browning of the giblets and enriches the flavour of the soup.
Beef stock
Forms the liquid base that carries the flavour of the soup.
Flour
Thickens the soup as it is cooked into the butter and liquid.
Mushroom ketchup
Adds savoury, umami depth to the soup.

The step that matters

Sauté the giblets in butter until slightly browned. Browning develops rich, savoury flavours through the Maillard reaction, which gives the soup its depth. Pieces should be dried and not crowded, or they will steam instead of browning.
