Mutton Soup
Ingredients
Directions
Prepare
Trim all the fat from the leg of mutton and place it whole in a kettle.
Cover the mutton with cold water and set it over the fire.
Simmer
When it boils, add salt to taste and the pearl barley.
Let it boil for four hours, keeping it covered with water.
About an hour before serving, add the onions and sage.
If you dislike the flavor from the onions and sage, remove the meat before adding them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Leg of mutton
- Provides the main meat and rich flavour that the broth is built on.
- Pearl barley
- Softens during long simmering, thickening the broth and adding body.
- Onions
- Add sweetness and aromatic depth to the broth as they cook.
- Sage
- Adds a herbal, aromatic note that complements the rich mutton.
The step that matters
Keeping the meat covered with water during the four-hour boil. If the liquid drops below the meat, the exposed surface can dry and toughen while the broth loses volume and concentrates unevenly. Keeping it submerged ensures even, gentle cooking and a clear, well-flavoured broth.
Swap the sage
How well each one fits the dish's main ingredients (mutton, barley, onion):
- Garlicfits better
- Celeryfits better
- Thymefits better
- Sagethe original
Fit is the average pairing score against mutton, barley, onion. Candidates are from the same food group and used in at least 100 recipes.
