Scalloped Cod

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Butter an earthenware pudding dish.

  2. Layer neat flakes of cold cod fish and any leftover gelatine in the dish.

  3. Pour sauce or melted butter over the fish.

  4. Sprinkle with coarse sea salt, a little red pepper, and a pinch of mace.

  5. Add alternate layers of fish and sauce until the dish is full.

  6. Cover the top with fine bread crumbs and dot with bits of butter.

  7. Bake at 400°F (200°C) for twenty minutes.
