Soft-shell Crabs

Ingredients

Directions

  1. Lift the shell at both sides and remove the spongy substance from the back.

  2. Pull off the 'apron' from the underside of the crab.

  3. Wipe the crabs clean and dip them in the beaten egg.

  4. Coat the crabs in fine bread or cracker crumbs.

  5. Fry in boiling fat for 8 to 10 minutes, depending on the size of the crabs.

  6. Serve with Tartare sauce or season with salt and cayenne and fry as before.
