Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt pork
Renders fat into the pot, adding savory flavor to the broth.
Potatoes
Provide starch and body, thickening the chowder as they cook.
Oysters
Supply the main seafood flavor and tender texture when gently stewed.
Tomato ketchup
Adds sweetness, acidity, and color to the broth.
Oyster liquor
Adds concentrated briny seafood flavor to the broth.

The step that matters

Stew slowly and covered. Gentle, covered heat cooks the potatoes through while keeping oysters tender; boiling vigorously toughens oysters and can break the layers apart.

Swap the tomato

How well each one fits the dish's main ingredients (pork, potato, oyster, pepper, butter, ketchup):

  1. Capsicumfits better
  2. Onionfits about as well
  3. Tomatothe original
  4. Asparagusfits about as well

Fit is the average pairing score against pork, potato, oyster, pepper, butter, ketchup. Candidates are from the same food group and used in at least 100 recipes.
