Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that becomes tender during slow stewing.
Eggs
Thicken the gravy as they set when heated, giving it body.
Flour
Thickens the milk and egg mixture so the gravy coats the chicken.
Milk
Adds moisture and richness to the creamy gravy.
Butter
Adds fat and flavor to finish the gravy.

The step that matters

Stirring the egg mixture into the hot liquid. Adding the egg mixture too quickly or without tempering with hot liquid first can scramble the eggs. Adding a few spoonfuls of hot liquid gradually while stirring brings the mixture up in temperature slowly, so it thickens smoothly instead of curdling.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, pork, pepper, milk, egg, flour, butter):

  1. Nutmegfits about as well
  2. Thymefits about as well
  3. Parsleythe original
  4. Marjoramfits about as well

Fit is the average pairing score against chicken, pork, pepper, milk, egg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
