What each ingredient does

Veal
Forms the main body of the dish, becoming tender when simmered before frying.
Egg yolk
Acts as a binder so the grated bread coating adheres to the veal.
Grated bread
Forms a crisp, golden coating that browns in the hot fat.
Butter
Adds richness and flavor and helps the coating brown during frying.
Flour
Thickens the pan liquid into a smooth gravy.
Lemon juice
Adds acidity that brightens the rich gravy.

The step that matters

Simmer the veal before coating and frying. Simmering in boiling water partly cooks the veal while keeping it moist, so the coating can brown without the meat drying out. Draining it well keeps excess water from making the coating soggy.
