Corned Ham, Baked

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the ham

  1. Test the ham by running a sharp knife close to the bone; it should have a pleasant odor.

  2. Soak the ham in cold water overnight.

  3. In the morning, trim off any bruised or torn portions.

Bake

  1. Make a dough with flour and water, and enclose the ham in it.

  2. Place the ham in a large pan and bake in a 350°F (175°C) oven for 30 minutes per pound.

  3. Once done, remove the dough and skin if desired.

Brown and serve

  1. Dust the ham with seasoned crumbs and quickly brown them in a 400°F (200°C) oven.

  2. Serve hot or cold, garnished with a frill of white paper around the bone.

What each ingredient does

Sweet corned ham
Is the main cut that is soaked, baked and served as the dish.
Rye or wheat flour
Forms a dough that encloses the ham and holds in moisture while it bakes.
Cracker or bread crumbs
Form a seasoned crust that browns quickly in the hot oven.

The step that matters

Browning the crumb crust. Crumbs brown quickly at high heat, so they can scorch if left too long. A short time in a hot oven gives color without drying the ham beneath.
