Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Form the edible shell that holds the stuffing while the flesh softens in the oven.
Bread crumbs
Absorb moisture and butter, giving the stuffing body so it holds its shape.
Butter
Adds richness and moisture to the stuffing and helps the crumbs brown lightly.
Egg yolk
Binds the stuffing so it holds together when baked and sliced.

The step that matters

Parboil the eggplants. Parboiling softens the flesh and draws out bitter compounds, so the cooked eggplant tastes mild. Skipping or shortening this step can leave the finished dish noticeably bitter.
