Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Make a soda-biscuit crust with the flour and divide it into two equal parts.

  3. Roll each part into a round shape, about ½ inch thick, and prick well.

  4. Bake in the hot oven until golden.

  5. Split the cakes in half and place one half on a platter, crust side down.

  6. Spread butter on the cake and layer with strawberries and sugar.

  7. Add the second half of the cake, repeat with butter, strawberries, and sugar.

  8. For the top layer, place the crust side up or cover with fruit.

  9. Return to the oven for 5 to 10 minutes and serve hot.
