Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Beat the yolks of the eggs with the powdered sugar.

  2. Beat the egg whites to a stiff, dry froth and add to the yolk mixture.

  3. Stir in the pastry flour quickly and gently.

Bake and roll

  1. Bake in a shallow pan at 400°F (200°C) for 20 minutes.

  2. While warm, cut off the edges and spread jelly over the cake.

  3. Roll the cake up and wrap it in a towel.

  4. Place in a cool place until ready to serve.

  5. Cut into slices with a sharp knife.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift and structure; yolks add richness and moisture to the sponge.
Powdered sugar
Sweetens the batter and dissolves easily into the yolks for a smooth base.
Pastry flour
Provides a light, tender structure that holds the rolled sponge together.
Jelly of your choice
Adds sweetness and moisture as the filling inside the rolled cake.

The step that matters

Stir in the pastry flour quickly and gently. Folding gently keeps the whipped egg whites from deflating. Overmixing develops gluten and knocks out air, leaving a dense, tough sponge that cracks when rolled.
