Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or fresh tongue
Provides the meaty body and savory richness that gives traditional mincemeat its character.
Suet
Adds fat that carries flavor and gives the filling a moist, rich mouthfeel.
Apples
Contribute moisture, tartness and bulk to the filling.
Brown sugar
Adds sweetness and moisture, with a molasses depth that rounds out the spices.
Raisins
Add concentrated sweetness and chewy texture.
Brandy
Adds aroma and acts as a preservative that helps the mixture keep during standing.

The step that matters

Letting the mixture stand. The mixture needs several days so the spices, fruit and alcohol blend and mellow. Using it too soon gives sharp, unmerged flavors.

Swap the mace

  3. Gingerfits better
