Ingredients

Directions

Prepare the cream

  1. Whip the cold cream until frothy and it holds its shape.

Make the custard base

  1. Boil the cream or milk with the vanilla bean and sugar until well flavored.

  2. Remove from heat and add the soaked gelatine to the mixture.

  3. When slightly cooled, stir in the beaten egg yolks.

  4. Once the mixture is cold and begins to thicken, stir continuously until smooth.

Assemble and set

  1. Gently fold in the whipped cream until well combined.

  2. Pour into molds and refrigerate or place in a cool spot.

  3. Optionally, add almonds, chocolate, peaches, pineapples, strawberries, or any seasonal fruit.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness and a smooth texture.
Gelatine
Sets the cream so it holds its shape when chilled.
Cold cream
Whipped to air, it lightens the set cream and adds softness.
Cream or rich milk
Forms the base, carrying the vanilla flavor and giving body.
Sugar
Sweetens the base and balances the richness of the cream.

The step that matters

Stir in the gelatine before the mixture is cold. Gelatine must be fully dissolved in the warm base and evenly distributed. If the mixture cools too far before folding in the whipped cream, the gelatine can set in lumps and the texture turns grainy.
