The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
The grated rind steeped in water gives the dish its strong citrus aroma.
Sugar
Provides sweetness and softens the texture by lowering the freezing point.
Orange juice
Adds bright orange flavour and a gentle acidity.
Egg whites
Whisked whites trap air, lightening the texture of the frozen ice.

The step that matters

Adding the egg whites when half frozen. If the mixture is fully frozen, the whites will not blend in evenly, and if it is still liquid they may deflate and separate. Partly frozen mixture holds the whisked whites while keeping them airy.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
