Cook the rice

  1. Boil the rice in just enough water to cover it.

  2. When the rice is nearly done, turn off the heat and drain the water.

Finish and serve

  1. Add the milk and simmer gently, ensuring it does not scorch, until the milk boils.

  2. Stir in the salt and beaten egg.

  3. Serve warm with cream, sugar, and a sprinkle of nutmeg.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole rice
Forms the body of the dish as its starch softens during boiling.
Milk
Provides liquid and creaminess as it simmers with the cooked rice.
Egg
Thickens the milk mixture and adds richness when stirred in.

The step that matters

Simmer the milk gently. Milk scorches easily on the base of a pan at high heat. Gentle heat keeps it from sticking and burning, and stirring helps it heat evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, egg, cream, sugar):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, egg, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
