Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and tart flavour of the filling, and break down into a smooth purée.
Egg whites
Whip into a foam that sets in the oven to form the meringue topping.
Sugar
Sweetens the apples and stabilises the whipped egg whites for a firm meringue.
Under crust
Forms the base that holds the apple filling and is baked before filling.

The step that matters

Whip the egg whites with the sugar until stiff peaks form. Egg whites under-whipped or greasy will not hold air, so the meringue may weep or stay flat. Sugar added gradually helps the foam stay stable while it sets and browns in the oven.
