Jelly Roll

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the powdered sugar and egg yolks until frothy.

  3. Whip the egg whites until stiff peaks form, then fold into the yolk mixture.

  4. Gently stir in the pastry flour.

Bake, fill and roll

  1. Pour the batter into a shallow pan and bake for 20 minutes.

  2. While warm, trim the edges and spread jelly over the cake.

  3. Roll the cake up in a towel until ready to serve.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Egg and flour barely smell alike, yet cooks put them together in 106,462 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the sponge its light, lifted structure.
Pastry flour
Provides gluten-based structure that holds the thin sponge together when rolled.
Powdered sugar
Sweetens the batter and helps the yolks form a stable, tender crumb.
Jelly
Adds sweetness and moisture to the filling, and makes the rolled cake stick together.

The step that matters

Roll the cake while warm. A warm sponge is flexible, so it rolls without cracking. Once it cools, the starches and structure set and the cake splits when rolled.
