Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal sweetbreads
- Form the main body of the dish, becoming firm and tender when gently boiled.
- Pork lardoon
- Adds fat that melts during cooking, keeping the lean sweetbread moist and tender.
- Butter
- Enriches the sauce with fat and rich flavor.
- Flour
- Thickens the liquid into a gravy by binding with fat and water.
- Cream
- Adds richness and smoothness to the sauce.
The step that matters
Boiling and cold-water shocking. Boiling firms the sweetbreads and sets their delicate texture, while the cold-water transfer stops cooking so they stay white and firm. Overcooking makes them tough and crumbly.
Swap the parsley
How well each one fits the dish's main ingredients (veal, pork, butter, flour, pepper, cream):
- Nutmegfits about as well
- Sagefits about as well
- Parsleythe original
- Thymefits about as well
Fit is the average pairing score against veal, pork, butter, flour, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
