Ingredients

Directions

  1. Soak and wash all bloody pieces of hog's tongue, heart, liver, and any bones or trimmings.

  2. Place the cleaned pieces in a kettle and cover with water.

  3. Boil until tender and bones drop loose.

  4. Cut the meat using a sausage cutter while hot.

  5. Strain the cooking liquid and thicken it with corn mush meal, boiling well and stirring to prevent scorching.

  6. Ensure the mush is well cooked and stiff enough for a stick to stand in it.

  7. Once no raw taste remains, stir in the chopped meat and season with salt, pepper, and herbs.

  8. Mix thoroughly and pour into pans to cool.

  9. Once cooled, slice and serve like cheese or fry until crisp for breakfast, with tomato ketchup.
