Why it works: Flour and nutmeg are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 18,623 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the structure of the dough that encloses the apples.
- Lard or butter
- Adds fat that keeps the dough tender and short.
- Apples
- Provide the filling, adding moisture and fruity sweetness as they cook.
The step that matters
Sealing the edges. If the dough edges are not sealed well, the filling can leak out and the apples may cook unevenly in the water. Pressing the seams firmly keeps the apples enclosed while the dumplings boil.
