What each ingredient does

Barberries
Provide the fruit base, along with tartness and aroma that define the jam's flavor.
Brown sugar
Adds sweetness and, as the mixture cooks down, thickens the jam and helps preserve it.

The step that matters

Stirring during the boil. Sugar-rich mixtures thicken as water evaporates and can scorch on the bottom of the kettle. Frequent stirring keeps heat even and prevents sticking and burnt flavor.
