Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Flour the cleaned cod inside and out.

  3. Secure the pork slices to the fish at equal distances using silver skewers.

  4. In a bowl, mix the grated bread, beef suet, sweet marjoram, thyme, pepper, salt, and anchovy (if using) to make the stuffing.

  5. Stuff the mixture into the belly of the cod.

Bake and serve

  1. Bake the cod in the preheated oven until cooked through.

  2. Serve with anchovy sauce or drawn butter.

What each ingredient does

Cod
Forms the main body of the dish, cooked whole around the stuffing.
Pork slices
Wrapped over the fish to add fat and savoury flavour as it bakes.
Beef suet
Adds fat to the stuffing, keeping it moist and rich during baking.
Grated bread
Forms the bulk of the stuffing and soaks up fat and juices.
