Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shank beef
Provides the meat that becomes tender and rich through long simmering.
Pork slices
Fried first to add browned, savoury flavour to the pan and the gravy.
Sweet marjoram
Adds a mild, floral herbal aroma to the finished gravy.
Onion
Adds sweetness and savoury depth to the gravy as it cooks.

The step that matters

Pressing the chopped beef in a cloth. Chopping the meat very fine and pressing it firmly binds the pieces together so the shaped mass holds its form when served. Pressing too lightly leaves it crumbly.

Swap the onion

How well each one fits the dish's main ingredients (beef, celery, pepper, pork, marjoram):

  1. Carrotfits better
  2. Potatofits better
  3. Capsicumfits better
