Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil meat in water seasoned with parsley, onion, bay leaf, and celery.

  2. When cold, remove skin and bones, and cut meat into 1-inch square pieces.

  3. Marinate meat in French Dressing for 1 hour.

  4. Add seasonings and fill dishes with the mixture.

  5. Cover with browned crumbs and bake at 400°F (200°C) for 5 minutes, or brown in the oven.

  6. To brown crumbs, sauté 1 cup in 1 tablespoon of butter until brown.
