What each ingredient does

Milk
Softens the sponge cake and adds moisture to the pudding.
Cream
Adds richness and moisture, giving a softer, silkier texture.
Eggs
Set during gentle heating to bind the mixture into a firm, sliceable pudding.
Ground almonds
Add body and a nutty flavour, keeping the mixture moist.
Sugar
Provides sweetness and balances the richness of the eggs and cream.
Apricot jam
Adds sweetness and fruity flavour, with a glossy layer on top.

The step that matters

Steam very slowly. Egg-based mixtures set gently. Too much heat makes the eggs curdle and turn grainy or rubbery, so a slow steam gives a smooth, tender pudding.
