Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main body and flavour of the croquettes.
Egg
Binds the mixture so the rolls hold their shape while frying.
Bread crumbs
Absorb moisture and help the mixture set into a firm, sliceable texture.
Butter
Adds richness and helps the fried exterior brown.

The step that matters

Chilling the shaped rolls. Cold resting firms the binder and fat so the rolls keep their shape instead of falling apart in hot fat.
