Roasted Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scrub the oysters thoroughly.

  2. Place them in a large tin with the round side of the shells down.

  3. Roast in a 400°F (200°C) oven until they open.

  4. Remove the upper shell as soon as they open.

  5. Sprinkle with salt, pepper, and chopped parsley.

  6. Add a little butter and serve hot on a bed of watercress.
