What each ingredient does

Eggs
Egg white sets in the hot water while the yolk stays soft, giving a tender, runny centre.
Toasted bread slices
Crisp toast gives a firm base that holds the poached egg and soaks up its yolk.

The step that matters

Cook until the egg white is firm. Egg white proteins set between about 60 and 70 °C, so the white firms while the yolk stays soft. Stopping too early leaves the white runny and fragile; cooking too long makes the yolk firm.
