Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, giving the cake a tender crumb and flavor.
Egg yolks
Add richness and emulsify the batter, helping it bind smoothly.
Egg whites
Beaten stiff, they trap air that lifts the cake and gives it a light texture.
Flour
Provides the structure that sets the cake as it bakes.
Baking powder
Releases gas during baking, helping the cake rise.
Sugar
Sweetens the cake and helps browning as it bakes.

The step that matters

Fold in the beaten egg whites gently. Egg whites hold air only when beaten stiff. Stirring them vigorously knocks that air out, so the cake rises less and turns out denser.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, flour):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, sugar, egg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
