Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Combine graham flour, white flour, sweet cream, and baking powder (or baking soda and cream of tartar) to form a stiff dough.

  2. Roll out the dough thinly.

Fill and shape

  1. Cover the dough thickly with dried currants.

  2. Roll out another sheet of dough and place it on top.

  3. Use a rolling pin to press down.

  4. Cut into shapes and prick deeply with a fork.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until golden.

What each ingredient does

Graham flour
Gives the crackers their nutty, coarse texture and wholesome flavour.
White flour
Provides structure so the dough holds together when rolled and cut.
Sweet cream
Adds fat and moisture, making the dough tender and rich.
Baking powder
Releases gas in the dough, giving a light, crisp rise during baking.
Dried currants
Add concentrated sweetness and chewy bits inside the layered crackers.

The step that matters

Pressing and pricking the layered dough. Pressing the two sheets together seals the currant layer inside, and deep pricking with a fork lets steam escape so the crackers bake flat and crisp rather than puffing or blistering unevenly.

Swap the currant

How well each one fits the dish's main ingredients (flour, cream):
