Graham Crackers

Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓

Graham Crackers

Oven, in the book's wordsA rather hot oven

Ingredients

Directions

The book says “a rather hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Sift together the Graham flour, sugar, salt, and baking powder.

  2. Rub in the butter until cold.

  3. Add the milk and mix into a smooth dough.

  4. Flour the board, turn out the dough, and knead for 5 minutes.

  5. Roll the dough to a thickness of ¼ inch.

Shape and bake

  1. Cut into small envelope-shaped crackers.

  2. Bake in a hot oven at 400°F (200°C) for 10 minutes, watching carefully to prevent burning.

  3. Handle carefully while hot and store for use once cooled.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Forms the main structure of the dough and gives the crackers their whole-grain body.
Butter
Rubbed into the flour to add tenderness and richness to the crackers.
Milk
Hydrates the flour so the dry ingredients bind into a smooth dough.
Baking powder
Releases gas in the oven so the crackers rise slightly and stay light.

The step that matters

Watching the crackers in the oven. Thin, small crackers in a hot oven can go from done to burnt within minutes. Sugar in the dough browns quickly, so the bake must be checked closely to keep them golden rather than scorched.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
