What each ingredient does

Egg yolks
Enrich the milk dip and help the bread brown and hold together when fried.
Sweet milk
Soaks into the bread to moisten it and give a soft interior.
Egg whites
Beaten to a froth, they give the lemon sauce a light, airy texture.
White sugar
Sweetens the lemon sauce and balances the sharp acidity of the lemon juice.
Lemon juice
Adds acidity and bright citrus flavour to the sauce.

The step that matters

Frying the dipped bread. Bread soaked in egg and milk can burn on the outside before the centre cooks, or turn soggy if the pan is too cool. Medium heat in enough butter gives an even golden crust with a moist inside.
