Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the sauce and break down into a thick, savory body during simmering.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the sauce.
Mustard
Contributes sharp, pungent flavor and helps emulsify and season the sauce.
Olive oil
Forms a thin layer on the surface of each bottle, adding fat and limiting contact with air.

The step that matters

Simmering slowly for 3 hours. Long, gentle simmering reduces water and concentrates flavors. Too hot a heat can scorch the tomatoes and thicken the sauce unevenly, so keep the heat low and steady.

Swap the allspice

How well each one fits the dish's main ingredients (tomato, pepper, mustard, vinegar, olive):

  1. Tarragonfits better
  2. Garlicfits better
  3. Capersfits better
