What each ingredient does

Lard
Fat that fries the onion and carries flavour into the gravy.
Flour
Thickens the gravy as it cooks with the fat and liquid.
Onion
Browns in the fat to add savoury sweetness and depth to the gravy.
Fish
Main protein that cooks gently in the simmering gravy until just done.
Claret wine
Adds acidity and fruity aroma to the gravy.
Madeira
Adds sweetness and rich, caramelised aroma to the gravy.

The step that matters

Adding the wine and Madeira without stirring. Stirring a simmering stew that contains flaking fish breaks the fish apart. Gently shaking the pan mixes the liquids while keeping the fish intact and tender.
