Candied Orange or Lemon Peel

Ingredients

Directions

Prepare the peel

  1. Soak and boil the orange or lemon peels as you would for preserves.

  2. Make a thin syrup by combining 1 quart of water with 1 pound of sugar; simmer the peels in it for 30 minutes.

  3. Pour the mixture into a bowl and let it stand overnight.

Candy and dry

  1. Prepare a second syrup with 1 pound of sugar and 1 pint of water, boiling until it falls from the spoon in threads.

  2. Add the peels to the syrup and boil for another 30 minutes.

  3. Remove the peels and drain them on a sieve.

  4. Transfer the candy to a dish to dry in a warm place.

What each ingredient does

Sugar
Forms the syrup that penetrates the peel, sweetening it and preserving it as candy.
Orange or lemon peel (in the method)
Provides the flavour and the bitter-sweet body that the syrup candies.

The step that matters

Boiling in the second syrup until it falls in threads. Sugar must reach a concentrated stage so the peel candies rather than staying wet. Too little boiling leaves it sticky; too much can cause crystallisation or a hard, dry result.
