What each ingredient does

Sugar
Sweetens the jelly and, with the juice's acid and pectin, helps it set firm when cooled.
Currant juice
Supplies the fruit's pectin and acidity, which form the gel that gives the jelly its structure.

The step that matters

Boil the sugar into the juice for 5 minutes. Boiling drives off water so the sugar concentration rises enough for pectin and acid to form a gel as it cools. Too little boiling leaves the jelly runny and unset.
